When In Doubt, Stir Fry
I’ve had plenty of leftovers sitting in the fridge that just didn’t seem too enticing. Some I had no idea how long they were there, but they didn’t smell bad. What I do in that case, as long as there’s no animal product that can be devastating to your immune system if rotten, and no visible mold, and you know it’s been refrigerated, just stir-fry the shit out of it. Most likely, bacteria and pathogens live on the outside of the food. Microwaving cooks it from the middle so it won’t likely heat up the areas that are “in the hot zone”. Stir frying for long enough and with high enough heat should do ‘er.* Throw in a bit of rice or quinoa that’s also ready in your fridge and you’ve got yourself a meal.
